Keep track of the info interviews you do. At first, you’ll feel like you can keep it all in your head, but especially if you’re looking for a bigger change to your career path, the information you take in is going to get very muddy very quickly. I use a simple tracker in Excel, but choose what suits you. Here’s a sample of what to keep track of:

Arrange the info in whatever order makes sense to you, of course. You may also want another list of people or employers you’d really like to get in contact with, and ways you can brainstorm to do it:
